一种黑青稞枸杞粥及其制备方法

Abstract本发明公开了一种黑青稞枸杞粥及其制备方法,所述黑青稞枸杞粥由以下重量份原料组成:枸杞提取物1份、黑青稞0.1份、藜麦0.1份、山药0.1份、枸杞0.1份、橘皮0.05份。本发明以青海诺木洪枸杞提取物为甜味剂,避免了外源性糖分的加入,保证了粥的甜度,黑青稞去除外皮,保证了粥口感的糯滑,避免煮提过程的过于粘稠;同时对黑青稞外皮进行了水溶性膳食纤维的提取,保证了全青稞的营养成分,并采取最后加入水溶性膳食纤维提取液,避免粥的糊化。黑青稞、藜麦先行共同煮提,使得膳食纤维和营养成分充分溶出,后续加入山药、枸杞,增加了粥的营养成分和感观,最后加入橘皮,调剂口感。
