Abstract本发明涉及一种白刺果酵素的制备方法,该方法包括以下步骤:⑴将白刺干果经超微粉碎,得到白刺果粉;⑵所述白刺果粉中加入纯水,搅拌混匀后加入壳聚糖、VC、柠檬酸并加热,经自然冷却至室温,得到白刺果原液;⑶在所述白刺果原液中先加入预先活化的果胶酶或纤维素酶或果胶酶#纤维素复合酶,搅拌均匀后酶解,再加入蛋白酶#淀粉酶#纤维素复合酶,搅拌均匀后酶解,得到酶解液;⑷所述酶解液中接种酵母菌、乳酸菌和醋酸菌,搅拌均匀后密闭发酵培养,经过滤去除残渣加入蔗糖,得到白刺果酵素液;⑸所述白刺果酵素液经冷冻干燥、粉碎后即得白刺果酵素粉。本发明成本低廉、周期短,且所得产品酵素营养价值更高。
