Abstract本发明涉及一种黑果枸杞酵素的制备方法,该方法包括以下步骤:⑴将黑果枸杞残果或果渣经超微粉碎,得到黑果枸杞粉;⑵所述黑果枸杞粉中加入纯水、稳定剂并加热,经自然冷却至室温,得到黑果枸杞原液;⑶在所述黑果枸杞原液中先加入预先活化的果胶酶或纤维素酶或果胶酶#纤维素复合酶,搅拌均匀后酶解,再加入蛋白酶#淀粉酶#纤维素复合酶,搅拌均匀后酶解,得到酶解液;⑷所述酶解液中接种酵母菌、乳酸菌和醋酸菌,搅拌均匀后密闭发酵培养,经过滤去除残渣后加入蔗糖,得到黑果枸杞酵素液;所述黑果枸杞酵素液经冷冻干燥、粉碎后即得黑果枸杞酵素粉。本发明成本低廉、周期短,且所得产品酵素营养价值更高。
