柴达木野生黑果枸杞营养成分分析

Abstract摘要:对柴达木野生黑果枸杞果实中的主要营养成分进行了分析, 结果表明, 黑果枸杞鲜果含水质量分数 85.03%, 其干果蛋白质量分数10.61%,脂肪6.66%,多糖4.28%,总黄酮质量分数4.29%, 原花青素3.42% 果实含有 Υ-VE 及δ-VE,每百克分别为0.0075 和0.016 mg,从黑果枸杞籽中提取的枸杞籽油维生素 E 含量较果实要高的多, 籽油富含 α-VE,Υ-VE及δ-VE,每百克分别为0.1906 mg,1.8939 mg 和0.045 mg 黑果枸杞中氨基酸种类相对较丰富,亮氨酸 蛋氨酸 苯丙氨酸异亮氨酸等含量相对较高 黑果枸杞中矿质元素丰富, 其中钾的含量最高,且远高于钠的含量,属于高钾低钠的食品。
